Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9×5-inch loaf pans or line them with parchment paper.
- Prepare Wet Ingredients:
- In a large bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and well combined.
- Incorporate Zucchini:
- Stir in the grated zucchini, mixing well to ensure it’s evenly distributed.
- Mix Dry Ingredients:
- In a separate bowl, sift together the flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and ground ginger.
- Combine Ingredients:
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Avoid overmixing to prevent a dense loaf.
- Add Optional Mix-Ins:
- If desired, fold in the chopped nuts, raisins, or chocolate chips for added flavor and texture.
- Prepare for Baking:
- Divide the batter evenly between the prepared loaf pans, smoothing the tops with a spatula.
- Bake:
- Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center of the loaves comes out clean.
- Cool and Serve:
- Remove the pans from the oven and let the bread cool in the pans for about 10 minutes.
- Then, transfer the loaves to a wire rack to cool completely.
